HOMEMADE YOGURTYogurt is a fermented food. Fermented foods have probiotics or good bacteria. Good bacteria is very important for a healthy body and strong immune system.
- 1 gallon of raw milk (I use milk from Shunpike Dairy but pasteurized works well too)
- 1 4oz plain or vanilla yogurt with live cultures (I found that Yobaby or Activia work the best for a smooth texture)
- You will also need:
Stainless steel double boiler, large enough to hold a gallon of milk
Candy or digital thermometer
*Make sure all of your equipment is clean and fresh out of the dishwasher or sterilized.
- Heat milk in a medium saucepan over medium heat, stirring until thermometer registers 185°.
*If you are using raw milk and don’t want to pasteurize the milk, only heat to 115°
- Reduce heat to low for 25-30 minutes (it will be slightly thicker at the longer cook time). You will notice that the milk gets frothy at the top.
- After 30 minutes at 185° (or 115° if you want to keep your yogurt raw) It’s time to cool down the milk.
- Place pot in a large bowl filled with ice water.
- Stir constantly until thermometer registers 110° (do not go below).
- Gently wisk in you yogurt starter. The yogurt is ready to be stored in mason jars and placed in your cooler incubator.
- Pour mixture into the mason jars.
- Create an incubator by adding the hot water from the double boiler to the cooler. Be sure to have enough water in the cooler to cover the jars up to the rim.
- Make sure that the water is between 110° and 115° in the cooler.
- Place jars in the cooler. Move the cooler to a spot in the kitchen where it will not be disturbed. Let it incubate for 6-8 hours for a not-so-tart creamy yogurt (some people prefer really tart yogurt, and let it stand for 24 hours. The longer it stands, the tarter it gets).
- When you think your yogurt is done, just do a jar tip test to see if it’s thick enough to not move. If it’s still the consistency of milk, place it back in the cooler and let it stand for a few more hours before checking again. If the yogurt has set, place it in the refrigerator for at least 8 hours.

I moved back to my hometown about a year ago, after spending 10 years in Seattle, WA, where health products and alternative food choices were everywhere. Whole Foods, PCC and Trader Joe’s were all within 5 miles of my house. I was in my glory and quite spoiled to have it all at my fingertips! As you can imagine, it was a bit of an adjustment to come back to “small town USA.” The closest Whole Food Market was 75 miles away. I was sad, disappointed, and felt as if I had to give up living the lifestyle I wanted to live, due to the lack of resources.

The problem was, I was looking for the big things and overlooking all the small signs and signals around me. One of my favorite discoveries after being here for a couple of months was Shunpike Dairy Farm. I met Liz about a year ago, and she is all about connecting with our local community. Connecting with her and other people that come to this farm made me realize that this area has AMAZING choices!
I really look forward to my weekly trips to the farm! It’s gratifying to fill up my 1/2 gallon mason jars full of the ice cold, creamy goodness! It always makes me feel good that this milk came directly from the beautifully cared for, pasture fed, dairy cows. All the nutrients, enzymes and probiotics are still in raw milk. Conventional milk is pasteurized or ultra-pasteurized, which means it is brought to a very high temperature which ends up killing off all of the nutrients, enzymes and probiotics in milk.
Feeding my soul…
The experience of going to the farm has become just that: an EXPERIENCE, an experience that is feeding my soul! It is not only about the milk…sometimes I visit and say “hello” to the cows and pick up some eggs, or I meet people and get into a conversation about homemade yogurt and cheese. I am connecting with my community and it feels great! I feel lucky to be only 10 minutes from the farm. Several people drive up from the city to get this glorious raw milk! I recently met a couple that was so happy to find Shunpike Dairy because now they would not have to drive to Pennsylvania to get it!
In an effort to bring awareness to the wonderful community that Shunpike Dairy has attracted, we have put together Shunpike Dairy Summer Event Series for each Saturday during the summer. This is a great opportunity for you to meet great people and learn the wonderful, healthy resources you have at your fingertips!

- 4 cups gluten-free oats
- ½ cup organic quinoa (rinsed and uncooked)
- ½ tsp sea salt
- 1 vanilla bean
- ¼ cup organic coconut oil (could be substituted for organic safflower oil, or organic butter)
- ¼ cup Coconut Palm Syrup or Raw honey
- ½ cup Coconut Palm Sugar
- 1 cup raw pecan pieces
- Heat the oven to 225 deg.
- Blend the quinoa and a ½ cup of oats in the blender to make a flour. (It doesn’t have to be completely smooth, but just break it down a bit) Add it to the rest of the dry ingredients in a bowl.
- Heat up the coconut palm syrup and coconut oil slightly so that it’s thins out.
- Slice open the vanilla bean, slide butter knife along the inside of the bean to extract all the vanilla goodness. Add to the oil mixture.
- Mix thoroughly and add to the dry ingredients until well incorporated. Spread the oat mixture onto a cookie sheet lined with parchment paper.
- Bake for 1.5hrs or until golden brown. (The granola will crisp up a bit as it cools)
- Let cool and transfer granola to an airtight glass jar.
Store bought granola tends to have lots of ingredients, lots of sugar and fat. Many times, the sugars are white and the fats are not the good fats. My version of granola is Gluten Free, Low Glycemic and uses the best ingredients! I added quinoa for some added protein and to enhance the crunch. I also used minimally processed sugars to sweeten it so you end up on the sugar rollercoaster! Give it a try and let me know what you think!

I had the wonderful opportunity to attend the Health & Happiness Summit at in NYC hosted by Dr. Oz at the end of February.
